Serving Suggestions:

  • The Murasaki sweet potato is definitely familiar to CSA regulars: purple skin with a white interior. Typically John refers to these just as Japanese sweet potatoes, as far as I can tell this is the first time he’s used the official varietal name of Murasaki. You can plan to cook these just as any other sweet potato! ♬ “boil ’em, mash ’em, stick ’em in a stew!” ♬
  • The Negi leeks, on the other hand, are different than their American cousin. The Negi leek looks like a cross between a scallion and a leek. I’ve never cooked one but after reading about them it seems like you can use their green tops raw or with just a little cooking, unlike leek greens which need a long cook. Of course, I thought of one of my favorite apps when hosting, Alison Roman’s labne topped with sizzled scallions that I shared here last year. I’m sure they would also be great atop fall favorites like bowls of chili or potato soup.
